Vegan Burritos Quick & Easy

With tofu, guacamole and salad

For 6 Wraps

Ingredients
  • 1 package of wraps
  • 2 avocados
  • 400 g tofu
  • 1 can of kidney beans (400 g)
  • 1 tomato
  • 1 salad
  • 1 bell pepper
  • ½ cucumber
  •  2 red onions
  • 3 little garlic cloves or 1 big one
  • 3 tbsp soy or oat yogurt
  • Cayenne pepper (as much as you like)
  • 1 tsp turmeric
  • 1 tsp Kala Namak
  • 1 pinch of nutmeg
  • 1 tbsp provencal herbs
  • 2 tbsp ground cumin
  • Pepper (as much as you like)
  • salt
  • Olive oil
  • 1 tbsp soy sauce
  • The juice of half a lime 

How to roll a burrito?

  • What is the best way to fold burritos? Spread the filling in the center of a burrito, fold once at the bottom and top, then roll up tightly from one side.

Recipe

  1. Wash and chop the salad. Wash the cucumber and bell pepper and cut into thin slices.
  2. For the guacamole, cut both avocados in half and scrape out the with a fork or spoon. Mash in a bowl or blender to a puree. Then mix with the juice of half a lime (depending on your preference you can also add a little bit more), a good pinch of salt, pepper, crushed garlic and a finely chopped red onion.
  3. For the burrito filling, drain 400 g of natural tofu or squeeze a little with your hands. Cut one onion and the tomato into small pieces. Heat a pan, add a bit of olive oil (about 2 tbsp), crumble the tofu into the pan and fry it together with the onion, stirring occasionally. After about 2 minutes, add the soy sauce, turmeric, cumin, Provencal herbs, cayenne pepper and nutmeg. Turn the heat down to low and stir in the yogurt. Then stir in the kala namak and the tomato. Drain the liquid from the beans and rinse in a sieve. Add the beans to the pan, mix again and season with pepper.
  4. Now heat the wraps for a few seconds on a hot stove top or in a pan (when the wraps are warm, it's easier to fold them).Spread guacamole on the wrap, then stuff a little of the tofu filling, salad, cucumber and bell bell pepper in the center of the wrap. Fold the wrap in at the bottom and top and roll up tightly from one long side. If you have more time, you can still fry the folded wraps in a pan without oil for about 2-3 minutes on each side until they are nice and crispy.
